I tend to think of [person]のこと as meaning "All that [person] is", and just like in English, it's a little ambiguous. If I say "I like all that you are." there really isn't a clearly defined idea of what I mean by that. I guess you could extrapolate things like your style, your moods, your opinions, ...

I'm not sure what other resources there are out there that have this function, but that particular dict has always served me really well. It uses EDICT, too, btw. Many children's books do actually use spaces. If yours does not, maybe you should consider a different book. Japanese sentence parsing is made easier by kanji, particles, and other helper words. When a sentence is mostly kana (e.g. for children), it becomes more difficult but not impossible to read....
