not your average japanese food post

So I did some searching and the "what's your favorite food" thread comes up constantly. That's not what this is. I am a professional chef working as a sous chef in a French Bistro. But I have plans to open and Izakaya style restaurant someday. Just looking to see if any other professional cooks are on the site working in Japanese food or otherwise.

Not I, however, I could probably help you find out what most popular foods are for Japan by asking my danna (husband). He is Japanese.
