Question about eating establishments in Japan

Hello all! I was reading in the book I'm working at to learn Japanese and in the cultural section of the current chapter it talks about restaurants and pubs. The one that caught my eye, and made me question my book, was the yakitoriya. In parentheses after yakitoriya it says, "specializing in barbecued chicken and/or pork offal."

Pork offal?!?!?!?! :o :o :o

Someone tell me that's not right. It just sounds really bad to me.

And don't think too hard about the skin of the sausages you eat, either. They mean "pig intestines".

Oh, thank goodness it's only sausage. I was just a little concerned by the way the book put it.

Not exactly. Did you read that dictionary entry? Read this one. (Also look up "viscera" if you don't know the word.) I imagine the guidebook entry was written by the restaurant, and whoever wrote it didn't realize how bad "offal" sounded in English.

Not that bad, for sure.

I'll not translate the following, so some of you just might wander...

"Le boudin noir se fabrique à partir de sang et gras de porc, d'oignons et d'une enveloppe pour la cuisson".

To eat with apples, as a cue. Which I did until I gave a thought to what it really was.
