I've been studying for a long time, and already know a lot.
I was wondering what level I should take.
Japanese 101/102/103, etc..?
What do students learn in each one?

What school? Every school has a different program; you have to ask the place you're applying.

Generally the professor in charge of the department will administer some sort of placement test for you.
