I have bought rack of lamb when living in the USA (ridiculously expensive) and assumed that what I was paying for was the meat of a juvenile domestic sheep

So in the USA lamb can mean goat just as mutton means goat in India?

I think it *is* kid being served (at least often in the Greek tradition) but... damn, I just don't know. I assume that in England and Ireland and so on, sheep are way more prevalent than goats for farming, so the transfer from goats to sheep for Paschal munching. After all, the big JC had a whole shepherd motif going on (and there was that whole bit about separating sheep from goats).
