The short answer is that it's the plain form of です.

Although I think its not entirely correct, that is the textbook answer. Tae Kim gives a short explanation here but throughout his guide he explains when you should and shouldn't use だ. It is more complicated than using です because it has a harsher tone to it if used improperly.

The explanation of using だ with から is here. When using から, you often have to make sure you don't drop the だ or the listener will mistake the から you are using for giving a reason for the から used to mean "from". Two different words, I believe. Anyway, I find Tae Kim's explanations to be very helpful.

I learned quite fast that だ isn't a reliable replacement for です。

My friend told me not to speak to her in polite tongue, exemple: 私 is too polite for men, use 僕。 With that in mind, I first tried to replace all です with だ。She said it was very weird. So apparently です is ok in familiar speech, unless i'm not advanced enough to know whatever I ought to know. Or maybe this is somehow related to 大阪 dialect, altough for the life of me I can't understand anything said in this dialect.

Well, for one thing, です after an い adjective is purely a politeness marker. So, 大きいです (or the like) when changed to plain form becomes simply 大きい, not 大きいだ。 That might be the sort of thing your girlfriend was telling you about.

Also, remember that girls tend to make everything overly polite, so while she might consider it harsh from here point of view, other men will not find it so harsh and won't mind at all. Sometimes these things are so individually subjective it's hard to tell where the rule ends and the personal preference begins.
