When you say "natsukashii" is do you say they last i? does this apply for all doubled letters? If it was another vowel character like e would I say it then?

When having a double character, the sounds is simply stretched out. "ou" is pronounced "oooooh" and ii is "iiiiiiii"

There are some exceptions, but that is the general rule.
