difference between hiranga and kanji

I think you have that backwards. Furigana is used to show the pronunciation of a word. Kanji in of itself shows the meaning.

Your pen-pal probably includes spaces just to make it easier for you. I'm sure if he was writing to another Nihonjin, there would be no spaces.
