Two additional things:
私の父 is redundant since 父 already means your own father. 彼 is not normally used in reference to your father, and it's not needed anyway because the subject is understood, so it can just be dropped from the second sentence.

荊妻が勉強したいを日本語です。
I'm trying to say, "I want my wife to study Japanese with me." The 'with me' part has completely stumped me.

I still don't know how to say "to want someone to do something", but isn't 家内【かない】”politically incorrect”? And should 妻【つま】be used instead? I can never remember this straight ...

Sairana's doesn't look bad, here's an alternative.
家内から私と一緒に日本語を勉強してもらいたい(です)。

Well there are a lot of words for wife 妻、家内、奥さん、嫁 etc. that aside I would translate the rest of the sentence as:
奥くさんに僕と一緒に日本語を勉強してほしい。
The basic pattern is personにverb〜てほしい。
You could be a little politer and say personにverb〜してもりたい
or personにverb〜していただきたい

新しいのは要ります or 新しいのは必要です。 You don't add です after a verb.

私の町にあまり日本人が住んでいませんから、日本語を話すのは難しいです。
I'm trying to say "Since there are few Japanese people that live in my town, it is difficult to learn to speak Japanese.
