sugoku + adjective is the correct form according to Japanese grammarians, but just like you mentioned, just about everyone says "Sugoi oishii!" :o

I hear a lot of males and certain females say su-ge-

The english pronounciation is a lot like :Sue-Gay instead of Sue Go E

I think one of the girls in my video clip said it, not sure. Either way, has anybody encountered this?

Yes, sugei is a slang form of sugoi.

Other examples are:
umai (delicious, good) and umei
urasai (too loud) and urasei
