What are you trying to say? If you want to say "I'm studying Japanese.", you can say "Watashi wa Nihongo wo benkyo^ shite imasu."

私は日本語を勉強しています。

Are you male of female and married or single?

If you are female you say "watashi."
If you are male you say "boku" if your singe and "watashi" if your married.

"Boku wa nihongo o benkyou shiteiru." - I'm studying Japanese.
"Boku wa nihongo o benkyou suru." - I study Japanese.

the "suru" means "to do" and is added to the end of a few verbs, especially foreign verbs (sukaidaibungu suru - skydiving).

I wouldn't recommend 僕 (boku)... Well, it depends on who the speaker wants to tell this to. If it's a friend, it'll be fine (provided the speaker is male).

I agree with hihlordjpさん. One thing to note is that Japanese pronouns do not tell you whether a person is married or single. It is not true that a married man uses 「わたし」while a single man uses 「ぼく」. The only difference between the two is of formality.

Compare this with the English language where prefixes used to address people are "marriage related" (etc. Miss and Mrs).

The problem with English is that when you encounter an unfamiliar female, you are forced to guess whether she is married or not, in order to address her properly as "Miss" or "Mrs". Sometimes, guessing wrongly can lead to some very awkward situations.

The good thing about Japanese language in this aspect is that the 「さん」honorific suffix is "all-encompassing".

So, is it wrong to say "Watashi wa nihongo benkyoushimasu"? cos that's what my teacher has been teaching me, which is different to the sentence above.

No, it isn't. Yours is correct, just put the particle "wo" after "nihongo"

You may not hear the "o" in there for the direct object marker sometimes, but you can assume. :P

The sentence is correct, I just used a slighlty less-than-informal speech that I'd use with friends; I used "shite iru" instead of shite imasu (imasu is the formal form of iru).
