I need the japanese word for To Forgive.

My personal favorite expression for "to forgive" is 大目に見る (oome ni miru), lit. "to look in big eyes."

the kanji for that is talking to a cow, or a cow talking. I'm wondering how does that relate to forgiveness? I mean surely a cow won't care if you scream at it...so maybe a cow will forgive you all the time no matter what you say to it? I mean, they don't even care that we eat them!

That's not the kanji for cow. Cow has the veritical stroke protruding from the top.

Keep in mind that usually with chinese characters that have distinct left and right elements, one side is a hint at the meaning, while the other is just a hint at the pronunciation. Trying to synthesize a meaning that makes sense by looking at both sides may serve well as a mnemonic technique, but it's generally not supposed to give you the intended meaning of the kanji.
