exceeding; too much; to overdo something

■ Verb (-masu stem) + すぎる (or すぎます)
言います (to speak) → 言い → 言いすぎる (to say too much)
■ -na Adjectives + すぎる (or すぎます)
簡単 (easy; simple) → 簡単すぎる (too easy)
■ -i Adjectives + drop the い + すぎる (or すぎます)
暑い (hot) → 暑 → 暑すぎる (too hot)

料理がうまいので、また食べ過ぎました。

COMMENTS
■ The kanji is 過ぎる which means “to exceed” but it is most often written in kana only.
■ To show a negative degree or something lacking using ない, the form is なさすぎる:
常識がなさすぎる
not enough common sense
遠慮がなさすぎる
